Paella from Mallorca, Spain Paella Mallorcina
In Mallorca , the largest of the Balearic Islands, they make paella with chicken, rabbit, and octopus. The Baleric Islands have a cuisine heavily influenced by having been a part of Catalonia, along with coastal northern Spain, the other Balearics: Minorca, and Formentera, Corsica,Sardinia, and even Sicily for a time. Minorca's port city of Mahon or Maon in Catalan supposedly gave Mayonnaise it's name.
Catalan Noodles With Pork and Sausage
This clip is one of my favorites! She demonstrates
many of the techniques that are the essence of Catalan cooking. From the slow caramelized softito or "sofregit" to the cooking of the tomato sauce until its water evaporates and it starts to fry in oil making the "xup xup" sound, her lessons are concise and clear. This recipe is delicious!!
